French Provincial Green Bean Salad





Here is a classic salad made In the provincial French style.  As is traditional with these French recipes, no precise measurements are given, just play with your own portions .

Start with approximately 1 lb of green beans and scale the recipe up or down to your preference.

Fresh green beans

Red onions (chopped)

Oil and Vinegar

Parsley (chopped)

Salt & Pepper

Clean beans and break in half.  Bring water to a boil.  Drop beans into boiling water and cook until tender.  DO NOT overcook

Mix oil and vinegar (two parts oil to one part vinegar) add onions and chopped parsley .  Let sit while beans are cooking.

Once beans are cooked, drain and toss into the salad mixture.  May be served hot or cold.  Salt and pepper to taste.

Over the years, I’ve experimented with adding additional ingredients.  I often substitute chopped scallions for the red onions (or even use both).  In addition, I add artichoke hearts and chopped tomatoes (or grape tomatoes) and add some fresh dill.
